So often mint-flavored confections draw herbal intensity from processed mint flavoring or extract. Here, fresh mint is given a chance to shine and runs with it. Expect a fudgy "candy" with a little crunch from finely chopped nuts, and just the right amount of moisture. Note: If you don't have a mini cookie scoop, use two teaspoons to drop truffles onto a parchment-lined cookie sheet. Allow the truffles to firm up in the fridge for 5 minutes, then roll briefly between your palms to create smooth balls.
