BlueKaleRoad's Strawberry Vinaigrette is a gorgeous hot pink color, but in addition to its good looks, the dressing does a marvelous job of adding well-balanced, bright, and fruity flavors to seasonal green salads. The acidity of the vinegar counteracts the sweetness of the strawberries and agave perfectly. Because the vinaigrette uses so little oil, the stawberries lead the charge in the flavor department, and the dressing feels light and fresh -- never slick.
Our neighborhood strawberry stand is open now and we are making daily visits. In addition to eating strawberries straight from the box on the walk home (we joke that the pints are single servings...) I am delighted to use strawberries in both sweet and savory ways. This vinaigrette is the result of a savory frame of mind and is delicious over spinach or baby greens, with cheese or to dress a fruit salad.
Makes 1 1/2 cups
Puree all the ingredients in a food processor until smooth. Store vinaigrette in a jar in the fridge for up to one week.
