Market810's light yet robust salad has just the right play of textures and flavors. The yin of crisp frisée, tart apple, and cider vinegar meets the yang of the warm vinaigrette studded with smoky bacon and caramelized shallots. Toasted walnuts and nutty Comte round out the presentation. One bite and all you'll taste is harmony. Note: The walnuts were left out of the ingredients list, so we used 1/2 cup.
The key rule for this recipe is choosing quality over quantity. Select a good fruit forward wine to serve with it and any cheese you favor like Manchego, Comte, Humboldt Fog or even Point Reyes Blue. The flavors will not disappoint.
Makes 1 Large Family Style Salad
Candied Pepper Bacon:
Sprinkle ingredients over bacon and bake on foil lined rimmed sheet at 350 for 25 mins or until crispy.
Vinaigrette:
In a heavy skillet toast the walnuts for a few minutes and sprinkle over frisée, crumbled bacon and cheese. In the same skillet brown the shallot in some of the bacon fat over medium with a pinch of salt and pepper. Add the apple cider vinegar and remove the fond with a wooden spoon. Whisk in remaining ingredients and drizzle warm dressing over salad.
