Mediterranean tomato basil with a twist

This is a recipe a friend made up in an effort to make healthy foods.

Serves As many as you like

  • 8 Small tomatoes off the vine
  • 1 quart Labneh cheese or thick Greek yogurt
  • 1 bunch Fresh basil leaves
  • 2-3 pieces Garlic
  • 1-2 pinch Salt
  • 1 splash Extra virgin Olive Oil
  1. Wash the tomatoes and basil thoroughly.
  2. Slice the top off the tomatoes and carve out the inside as if you were to stuff them
  3. To prepare the stuffing, I use labneh cheese, but if you cannot find that you can use Greek yogurt. If you use Greek yogurt you should add a pinch of salt and mix it then strain it overnight with a cheese cloth in the fridge so it becomes very thick. Chop the basil very finely and mix a handful of the chopped basil into the yogurt/ labneh then add 2-3 cloves of garlic minced, then add a pinch of salt. Mix together.
  4. Using a spoon, spoon the mixture into each tomato.
  5. Once all done place on your favorite serving dish and drizzle some olive oil in top and sprinckle some more chopped basil to garnish. Enjoy as a snack or as a party apatizer!
