Pearled Barley has become very popular with my family lately with some of the recipes I've been making with it. This salad is a great summertime side dish and is loaded with flavor.
I like to use a good balsamic vinegarette as the dressing.
- 1/2 cup pearled barley
- 1 1/2 cup 365 vegetable broth
- 2 cups broccoli florets, lightly boiled
- 1 bunch lettuce, chopped
- 1 large tomato, diced
- 1 green onion, chopped
- 1 small cucumber, sliced
- 1 small carrot, chopped
Put pearl barley into a pot with broth then bring to boil. Simmer for about 35 minutes until grains are slightly soft.
Rinse grains under cold water then drain.
Once cool, mix the barley with the rest of the vegetables and chill before serving.
Top with your favorite salad dressing.
