Serve this fragrant, flavorful dressing with any green salad or toss with steamed veggies, if you like. It also makes a bold dipping sauce for spring rolls and dumplings. This is a Health Starts Here recipe.

Makes about 1 cup

  • 1 carrot, grated
  • 2 tablespoons mirin
  • 2 tablespoons rice vinegar or apple cider vinegar
  • 1 tablespoon reduced-sodium soy sauce
  • 1 tablespoon prepared mustard
  • 1 tablespoon grated fresh ginger root

Put all ingredients into a blender and purée until smooth.
